Superfood Green Energy Balls Recipe
There’s nothing quite like packing up a picnic and sharing delicious food in the company of good friends. With the cooler weather taking over Vancouver, we were inspired to keep the good vibes alive and move the party indoors! We whipped up some no-bake healthy snacks and ate barefoot on the floor with some of #TeamNested’s hungry yogis.
Energy balls are a staple for so many reasons. They’re healthy, they’re filling, portable, and totally customizable. To make these little green machines we used dates, cashews, and oats… and then we supercharged them with Super Greens for a boost of energy, immune support, and healthy detoxification. Don’t let the colour fool you – these balls do not taste green!
They’re so easy (and fun!) to make. You simply add all of your ingredients into a blender or food processor, pulse until it’s all mixed together, and then get rolling. Try to make all of your energy balls the same size, you should be able to get 12 with this recipe. Next comes the really fun part…
The drizzle! After melting the dark chocolate chips, we added a little bit of coconut oil to the mix to help it pour easily over the energy balls. Fun fact: a craving for chocolate is actually a symptom of a Magnesium deficiency, and dark chocolate is rich in this mineral. Bonus!
We set up our indoor picnic among beanbags and stuck to healthy finger food for the extra snacks. In addition to the energy balls, we opted for bright, fresh fruits that remind us of summer, some raw nuts, and of course, a glass of Super Greens to recharge without the crash you get from caffeine, sugar or energy drinks. Our yogis approved!
Superfood Green Energy Balls Recipe
These vegan, superfood packed energy balls are perfect for breakfast on the go, a mid afternoon snack, or a post-yoga refuel. Plus, they’re so simple to prepare!
Ingredients:
• 15 large (200g) medjool dates, pitted
• 1⅓ cups (200g) raw cashews
• ½ cup (50g) oats
• 1 Tablespoon coconut oil, melted
• 1 scoop Super Greens
• 2 teaspoon ground ginger
• 3 Tablespoon dark chocolate chips, meltedInstructions:
1.) Start by soaking the pitted dates in warm water for 5 minutes, and then drain.
2.) In a food processor or blender, pulse the oats and cashews until they have a sandy texture.
3.) Add the dates, coconut oil, Super Greens and ginger, and blend away until the ingredients are well mixed and have formed a sticky dough.
4.) Roll the dough into 12 equal sized balls and place on a baking sheet lined with parchment paper.
5.) Melt your dark chocolate chips in the microwave, then drizzle over the energy balls. *Pro tip: add 1/2 tsp of coconut oil to help your melted chocolate drizzle better!
