Nested Naturals Healthy Stir Fry

As much as we love cooking, sometimes all we really want is something healthy and fast. This stir fry is the best of both worlds! It only takes 15 minutes to make and is packed with a ton of nutrients to keep you going on long bike rides or hikes. Check out our team member Andrew’s recipe for a single serving healthy vegetable stir fry.

Ingredients: IMG_3038
1 tbs Avocado Oil
1 Carrot
1/2-1 red pepper
1/2 Zucchini
3 Sprigs of Asparagus
1/2 small red, white or yellow onion
1/4 teaspoon ground paprika
1 teaspoon ground turmeric
1.5 teaspoons ground ginger
1 tbs soy sauce
1 tbs siracha (to taste)
1 serving of rice
1 soft boiled egg (boil for 5:30)

Directions:
1.) Add oil to pan and turn to medium heat (low if using olive oil)
2.) Add water to medium sized sauce pot and turn to high heat
(water level should completely cover an egg)
3.) Dice carrot, red pepper, zucchini, asparagus. Add to pan.
4.) Dice onion, add to pan in 2-5 mins or when carrots and peppers are softIMG_3037
5.) Add ground spices to the pan. You may need to add more oil if you notice spices clumping or sticking.
6.) Softly add egg to boiling water, set timer for 5 minutes and 30 seconds
7.) When onions are translucent, add rice, soy sauce, and siracha to the pan and stir
8.) Run the egg under cold water or use an ice bath
9.) Transfer stir-fry to a bowl, shell the egg and add to the stir-fry
10.) Top with cracked black pepper and mow down!
